ci(workflows): update build workflow to support Hakan variant

Modify the build and kernel-custom workflows to replace references to the KrisKernel variant with the Hakan variant. This includes updating conditional checks, configuration settings, and versioning outputs to ensure compatibility with the new kernel variant. These changes enhance the build process and maintain consistency across workflows.
